Farmer Joe’s Organic Beef Burger with Cloonconra Cheese & Red Onion Mustard Seed Compote







400g Lough Owel Organic Beef mince
Salt and pepper to taste
4tbspn Worchester sauce
1 egg
1 small white onion, diced
80–120g breadcrumbs
3tbspn Heinz tomato ketchup
Drizzle of vegetable oil

Red Onion Compote
2 red onions, sliced
4tbspn red wine vinegar
4tbspn Worchester sauce
1tbspn mustard seeds
1tbspn red currant jelly
2tbspn Heinz tomato ketchup

For each person
1 brioche burger bap
2 slices of ice-berg lettuce
1 slice ripe heirloom tomato
Slice red onion
Piece of Cloonconra cheese


1. Place the Lough Owel Organic Beef mince, white onion, ketchup, some seasoning, 1 egg and Worchester sauce into a bowl and mix well.
2. Add breadcrumbs bit by bit until you bind the ingredients together but don’t make them too dry.
3. Heat a frying pan, add in the oil and then the burgers. Cook until golden, then turn and repeat until browned on the opposite side. Turn again and lower the heat and cook slowly for 8–9 minutes turning every two minutes.
4. Whilst the burger is cooking, heat a small pot and add a drizzle of oil.
5. Sweat the red onion (without colour) then add in the red wine vinegar, Worchester sauce, mustard seeds and ketchup.
6. Cook slowly for 10–12 minutes.
7. To assemble, top one side of the brioche bun with lettuce, tomato, and onion, then the other side with a burger. Top with cheese and melt a little. Finish by placing on one or two spoonfuls of the red onion mustard seed compote.
